How Do E-Bikes Perform on Off-Road Trails?

I haven't used ebike yet, but I am thinking to get one. I have a farm house and it is few kilometers off road from the highway, I want to get a foldable ebike that I can take for off road riding. Has anyone taken their e-bike off-road? How does it handle rough terrain compared to a regular mountain bike? How often do you switch to pedaling.
